It went by so fast and so many calories were consumed. 😂 but that’s okay cuz now all I want is greens. The good news this roasted cauliflower and kale winter salad is just that! Hearty and delish you need to make it.  Ingredients below and recipe up in the blog!⁠

Ingredients:⁠
Salad:⁠
1 bunch Lacinato Kale, destemmed and chopped⁠
1 head of Cauliflower, core removed and cut into steaks and then cut into bite-sized pieces⁠
2 tsp Salt⁠
1 tsp Cumin⁠
1/2 tsp Pepper⁠
2 tsp Olive Oil⁠
Pinch of salt⁠
Lemon Caper Vinaigrette:⁠
1/2 cup Olive Oil⁠
2 Lemons, juice⁠
1 tbsp Dijon Mustard⁠
1 clove Garlic, minced⁠
2 tbsp Shallot, minced⁠
2 tbsp Capers, minced⁠
2 tsp Agave or Honey⁠
Salt and Pepper⁠
Toasted Breadcrumbs:⁠
1/3 cup Panko⁠
2 tbsp Olive Oil⁠

Baylen convinced me that we needed to take holiday Baylen convinced me that we needed to take holiday photos and as much as I was not in the mood, we did it. And I’m so glad we did. Shout out to my dad for snapping these bad boys in the 10 minutes of sunlight we had 😂 Swipe to the end to see Mila wildn’ out. I’m starting to get the feeling she’s going to be quite the personality.
I write this as I made my morning coffee at 10:30 I write this as I made my morning coffee at 10:30 this morning. Coming from someone who used to wake up at 4:45 am. Life is definitely different, but I love it. And while I don’t expect it to get easier, I do expect to get better. Thankful for my husband (who might be the best dad) and my girl gang (@laurenkraz with the featured quote) who have been super supportive with help answering all my questions and giving me encouragement. Mommin’ ain’t easy but it’s so worth it. -

Guys, Smoke Roasted Maple Blue House Salmon was the most delicious, fresh protein to serve on top of these Corn Miso Yakisoba Noodles. Ugh, I about died of happiness when I took one bite. Ingredients:
8 oz Smoke Roasted Maple Bluehouse Salmon
2 tbsp Butter
3 cup White Sweet Corn
½ cup Coconut Milk
2 tbsp White Miso Paste
½ cup Water
½ White Onion
2 Garlic Cloves, chopped
8 oz Yakisoba Noodles, cooked according to package instructions
Âź cup Corn
Âź cup Green Onions, chopped
Salt and pepper

Instructions:
Preheat oven to 350 degrees. Once oven is preheated place Smoke Roasted Maple Bluehouse Salmon into baking dish and bake for 15 minutes or until salmon is heated throughout. Remove from oven and flake.
In a pot, add butter, white onion, garlic, and cook until translucent and fragrant. Add in corn and continue to cook while stirring until corn has softened about 2 minutes. Stir in miso and coconut milk and stir to combine. Using a hand blender, blend contents of pot into a sauce. Add in water and cook until desired thickness is reached. Taste and Season with salt and pepper.
Add in cooked yakisoba noodles and toss to coat noodles in sauce. Top with Smoke Roasted Maple Bluehouse Salmon, sliced green onion, and corn. Enjoy!
