I'm always sad to see winter come to an end, but I am super excited for some new produce to play with! How about you?! Save this bad boy for later, recipe below! ⁠⁠

Ingredients:⁠⁠
Green Goddess Dressing:⁠⁠
2 Anchovy Fillets packed in oil⁠⁠
1 Clove of Garlic⁠⁠
1/4 cup, Green Onion⁠⁠
1/4 cup, Fresh Dill⁠⁠
1/4 cup, Fresh Cilantro⁠⁠
1/4 cup, Fresh Parsley⁠⁠
1/4 cup, Fresh Basil⁠⁠
1/2 cup Mayo⁠⁠
1/2 cup Greek Yogurt⁠⁠
Juice from 1 Lemon⁠⁠
Salt and Pepper⁠⁠
Salad:⁠⁠
1 pound Pasta, cooked according to package instructions and chilled in the fridge⁠⁠
6 oz Butter Lettuce Blend, chopped⁠⁠
4 Radishes, thinly sliced⁠⁠
1 Cucumber, sliced and cut into half moons⁠⁠
2 cup Sweet Corn Kernels (I didn't cook the corn and cut them right off the cob for use)⁠⁠
1/2 cup Green Onions, sliced⁠⁠

Instructions:⁠⁠
Cook Pasta according to instructions and cool⁠⁠
Mince garlic and anchovies until it becomes a paste. Add minced garlic and anchovy, herbs, lemon juice, mayo, greek yogurt into a food processor and pulse until smooth. Season with salt and pepper to taste.⁠⁠
In a large bowl add cooked/cooled pasta, chopped butter lettuce, sliced radish, cut cucumber, sweet corn kernels, sliced green onion, and dressing. (I like to start out light with the dressing and add in more if I need more.⁠⁠

When my alarm goes off I jolt out of bed, snoozies are for loozies. 
Make my coffee with oat milk.
Soak in some morning thoughts with Seal. 
45-minute workout. 
Shower with some ballads that I enjoy blaring out.
Get dressed in what I deem a ā€œcute outfitā€. 
Make myself some breaky. 
Wipe crumbs off my face. All in that order. Having a routine that you feel good about sets yourself up for success! I know for me when I walk out the door having accomplished so much already- I’m ready to bitch slap my day in the best way. If you don’t, do yourself a favor and just commit 2 weeks to starting a routine and notice how you feel! Happy Tuesday Y’all!

Happy Friyay! Soup szn in NEVER over IMO. I dunno Happy Friyay! Soup szn in NEVER over IMO. I dunno call me a big soup gal, but I could literally eat it whenever. And this Avogolemono Soup (ie Lemon Greek Soup) has an herby flavor for all your Springy Vibes. And while it definitely has a tempering step that may intimidate you, don't let it! It's souper easy (see what I did there) and well worth it. Make it this weekend! Recipe Below:⁠⁠

Ingredients:⁠⁠
2 QTS Chicken Stock⁠⁠
1 cup White Medium Grain Rice ⁠⁠
1.25 pound Chicken Breast, cooked and shredded ⁠⁠
3-4 cloves Garlic, minced⁠⁠
1 Onion, chopped⁠⁠
2 Stalks Celery, chopped⁠⁠
2 Carrots, Chopped⁠⁠
2 Bay Leaves ⁠⁠
1/2 Lemon Juice⁠⁠
2 Large Eggs ⁠⁠
1 1/2 tsp Dried Thyme⁠⁠
1 1/2 tsp Dried Oregano⁠⁠
1/4 cup Fresh Dill, Chopped ⁠⁠
Optional: Red Chili Flakes ⁠⁠
Salt and Pepper to taste⁠⁠

Instructions:⁠⁠
In a large pot add 2 tbsp of Oil on medium heat. Add carrots, onion, and celery. Mix while heating for 1 minute. Add in garlic, thyme, oregano (and red pepper flakes if using) and heat while stirring until fragrant. Season with salt and pepper.⁠⁠
Add in Rice, and stir to coat in oil. Rice will start to toast while stirring. Once rice has turned translucent on the edges, opaque on the inside, and has a nutty aroma it is fully toasted. ⁠⁠
Add broth and cook until rice is tender. Stir in cooked shredded chicken. Taste and add salt and pepper as necessary⁠⁠
In a medium bowl add egg and lemon juice. Whisk together. Once well beaten , while whisking- slowly add in two ladels of hot broth. This is going to temper the egg mixture. Once combined add lemon egg sauce to soup. Turn off heat and stir to combine. Taste and season with salt and pepper if necessary. ⁠⁠
Top with freshly chopped dill and lemon wedges. and Enjoy! ⁠⁠
