But then through the grace of all that is gluten-free I whipped up this juicy, delicious, flavor-packed Paleo Braded Chicken. And fugetaboutit it's life changing. Ingredients below. 1/2 cup Coconut Oil⁠⠀
1 Pound of Chicken, cut in half and pounded to 1/2 inch thickness⁠⠀
3/4 cup Tapioca Flour⁠⠀
1 cup Almond Flour⁠⠀
1 tbsp Italian Seasoning⁠⠀
1/2 tsp Onion Powder⁠⠀
1/2 tsp Garlic Powder⁠⠀
1/2 tsp Red Pepper Flakes⁠⠀
1 tsp Salt⁠⠀
1 Egg⁠⠀
2 tbsp Almond Milk⁠⠀
Spaghetti Squash:⁠⠀
2 clove Garlic, miced⁠⠀

1/2 Pound Lean Ground Turkey⁠⠀
1/2 Yellow Onion, diced⁠⠀
2 Cloves of Garlic, minced⁠⠀
1 Red Bell Pepper, cut into matchsticks⁠⠀
28 oz Crushed Tomatoes⁠⠀
2 tbsp No Sugar Added Harissa Paste⁠⠀
1- 1 1/2 tsp Red Pepper Flakes⁠⠀
1 tsp Cumin⁠⠀
5 Eggs⁠⠀
1/4 cup, Parsley, chopped⁠⠀

Selfies? Are they still a thing? Asking for a frie Selfies? Are they still a thing? Asking for a friend. Guys- Day 7 of Whole30 and I finally am reminded why I signed up for this. My energy is back, I feel rested, my digestion is back to normal, and I’ve had minimal anxiety. Up until 2020 I had eaten primarily paleo for a few years. When Baylen and I got back from our honeymoon that all went down the drain, and I was eating foods that my body just doesn’t like to process. After Whole30 I will “treat” myself to certain foods again, but I’m definitely going back to more of a cleaned up diet and eating things that aren’t packed with a bunch of shit I can’t pronounce. Anyways just wanted to take a selfie, cuz I was- how you say, feeling myself. Also, HMU if you are also doing Whole30! I like to know I’m not alone 😂😂

1 1/2 pounds Chicken Breast⁠⠀
2 Celery Stalks, chopped⁠⠀
2 Carrots, chopped⁠⠀
1 Yellow Onion, medium diced⁠⠀
1 1/2 tbsp Garlic, minced⁠⠀
1 Leek, stems removed, cut in half and sliced into half circles⁠⠀
1 Sweet Potato, peeled and medium diced⁠⠀
1 Crown of Broccoli, cut at stem and cut into bite sized florets⁠⠀
1 cup Kale, stems removed and chopped⁠⠀
8 cups Chicken Stock⁠⠀
1 Meyer Lemon, juiced (you can use a regular lemon too if you can't find a meyer lemon)⁠⠀
2 tsp Dried Oregano⁠⠀
2 tsp Dried Thyme⁠⠀
1 tbsp Red Pepper Flakes⁠⠀
Salt and Pepper, to taste⁠⠀
1 1/2 tbsp Ghee or Olive Oil⁠⠀

It's officially the week of Christmas! And if you It's officially the week of Christmas! And if you are anything like me, you're house is starting to smell like an bakery and you may be needing a sweets intervention very soon! Keeping up with the sweet treats this week is none other than some traditional walnut salted fudge. Get the recipe below!⁠⠀

Ingredients:⁠⠀
3 cups granulated sugar⁠⠀
1 tbsp Agave Sweetener⁠⠀
2/3 cup cocoa ⁠⠀
1/2 teaspoon salt⁠⠀
1 1/2 cups whole milk⁠⠀
1/4 cup butter⁠⠀
1 teaspoon vanilla⁠⠀
3/4 cup Chopped Walnuts⁠⠀
Maldon Salt to top⁠⠀

Instructions⁠⠀
Line an 8 inch square pan with buttered parchment paper.⁠⠀
In a medium heavy saucepan stir together sugar, Agave, cocoa and salt, then add the milk and stir together with a wooden spoon.⁠⠀
Cook over medium heat stirring continuously until mixture starts to boil.⁠⠀
Turn heat to low and continue to cook without stirring until temperature reaches 235 °F⁠⠀
Remove pot from heat, add the butter and vanilla. ⁠⠀
Beat mixture with a wooden spoon just until mixture begins to lose some of it's gloss. ⁠⠀
Strir in chopped walnuts ⁠⠀
Then spread quickly in prepared cake pan, top with more chopped nuts and maldon salt. ⁠⠀
Let cool completely  and c ut into squares. Store in an airtight container! ⁠⠀
