Salmon with Charred Corn and Scallion Salsa
Salmon with Charred Corn and Scallion Salsa should be your go to for dinner this week! Either turn on your grill or use a grill pan, this dish is a stunner!
Ingredients
- 4 filets of 4 oz Salmon
- Onion Powder
- Garlic Powder
- Chili Powder
- Salt and Pepper
- Olive Oil
- Salsa
- 1 Anaheim/hatch Pepper
- 6 Scallions
- 1 Corn on the cob
- 1.5 tbsp Shallot, minced
- 1 Garlic clove, minced
- 1 tbsp Olive Oil
- 1-2 Limes, juiced
- 1 Avocado, diced
- Salt and Pepper
Instructions
Preheat Oven to 400 degrees- if using grill pan. If not, just fire up your grill.
You can roast your corn, scallions, pepper and cook salmon on the grill or use a grill pan. I used a grill pan.
Make the salsa first. Start by charring the corn, scallions, and pepper. Add Anaheim pepper directly to flame and rotate until blistered all over. put in plastic bag to steam for about ten minutes. Remove and remove black skin. Deseed and destem and chop up. Add corn directly over flame and rotate until corn is cooked and charred. Using a knife cut the kernels off the cob. Set aside. Heat up grill/grill pan and add the scallion until grill marks and flip and repeat. Cut into slices.
In a bowl add chopped pepper, corn, scallions, minced shallot, minced garlic, olive oil, lime juice, salt and pepper. Mix together. Add in the diced avocado and mix carefully not to mash.
Season salmon filets liberally with onion powder, garlic powder, chili powder, salt and pepper. Brush with Olive oil. If grilling, cook for 6-8 minutes on one side and turn over to cook for 1-3 minutes or until fish reaches 145 degrees. If using a grill pan, get pan super hot. grill for 3 minutes on each side, allowing grill marks to appear and pop in over for 3-8 minutes or until salmon reaches 145 degrees.
