Preheat Oven to 400 Degrees

Add Meatball ingredients to a bowl and mix by hand. Be careful not to overwork meatballs, it will make them dense. Using large cookie scoop, scoop mixed meatball and roll into balls. Set aside on plate

In a large oven-safe skillet heat 1 tbsp olive oil until hot. Sear meatballs on 2 sides and pull out onto plate.

In oven-safe skillet, add in a tsp of olive oil, chopped onion, and minced garlic. Cook while stirring until translucent and fragrant. Add in tomato paste and chili paste. Stir in garlic and onion while cooking. Allow to cook for 1-2 minutes while stirring. Add in chicken stock, oregano, and stir until simmering. Add in crushed tomatoes and diced tomatoes and stir together. Using tongs add meatballs into tomato sauce.

Pop into preheated oven and cook for 25-35 minutes. Add sliced mozzarella to top and bake until cheese is melted.
