Anywho, like every news station all over the US, I’m here to report it is CHILLY outside. So obviously it is time to break out all things comfort food. And GUYS, this One Pot Creamy Mushroom Gnocchi is all that and more.

One Pot Creamy Mushroom Gnocchi

All things cozy night in with this dreamy One Pot Creamy Mushroom Gnocchi. Minimal mess with maximum flavor!

Ingredients

  • 2-16 oz Packs Gnocchi
  • 1 Shallot, minced
  • 2 Garlic Colves, minced
  • 20 oz Mushrooms of Choice, cliced
  • 2-3 tbsp Butter
  • 2 sprigs of Thyme
  • 1/2 cup White Wine
  • 3 cups Chicken Stock
  • 1/4 cup Grated Parmesan Cheese
  • 3/4 cup Heavy Cream
  • 4 cups Spinach Chopped
  • Top with Shaved Parmesan Cheese

Instructions

Melt 2 tbsp of butter in skillet on medium heat. Add in sliced mushrooms and cook for 3-5 minutes until mushrooms start to brown (they will shrink down a ton and you may need to add in an extra tbsp of butter if need be). Add in Shallot and garlic and stir into mushroom. Continue to cook while the shallots and garlic become fragrant. Season with salt and pepper.

Once mushrooms are browned and shallots/garlic are fragrant deglaze with white wine and cook until almost dry. Add in chicken stock, gnocchi, and thyme and allow gnocchi to cook. Be sure to stir if gnocchi isn't completely submerged. Sauce will begin to thicken while the gnocchi cooks

Stir in grated parmesan cheese, season with salt and pepper. Turn off heat and add in cream and chopped spinach, stir. Top shaved parmesan. Enjoy!
