I am such a sucker for French Onion Soup. Until I made French Onion Gnocchi Soup, and guys this dish is life changing.

Soup season is my jam! I LOVE soup and every cozy thing that goes along with it. This French Onion Gnocchi Soup is one that I’ve been wanting to share for awhile, but I wanted to get it just right. And boy, do I think I nailed it this time. The flavor, texture, and vibe was all spot on. Excited for you to make this one, friends!

French Onion Gnocchi Soup

We are kicking off soup season with this French Onion Gnocchi Soup! This is comfort in a bowl and sure to be a family favorite!

Ingredients

  • 4 pounds, Sweet Onion, thinly sliced
  • 4 tbsp Butter
  • 1 tbsp Garlic, minced
  • 2 tbsp Brown Sugar
  • 1 tbsp Sherry
  • 1 cup Dry White Wine
  • 1 1/2 tbsp Flour
  • 2 qts (8 cups) Beef Stock or Broth
  • 2- 16 oz Boxes of Gnocchi
  • 3 Sprigs of Thyme
  • 1 Bay Leaf
  • 8 Slices of Crusty bread
  • 16 oz Gruyère Cheese, Shredded
  • Salt and Pepper

Instructions

In a dutch oven, add butter and sliced onion and cook while stirring on medium low to caramelize onions. This is a lot of onions and will likely take about 50 ish minutes. Towards the end, sprinkle in brown sugar and minced garlic and stir while cooking for 2-3 minutes until fragrant. Season with salt and pepper.

Add in sherry and white wine and bring to a boil. Stir in Flour. Cook for about 2 minutes while stirring. Add in beef stock, thyme, and a bay leaf and bring to a boil. Reduce heat to a simmer, simmer for 10 minutes. Add in Gnocchi for last 5 minutes. Taste and season with salt and pepper.

Turn on Broiler. Align oven safe soup bowls on a sheet tray, add soup to oven safe soup bowls, Add a slice of bread and 1-2 oz of Gruyère Cheese. Broil in oven for 1-3 minutes. Don't stop looking at it, bread can burn so fast. Once golden and melted remove from oven. Enjoy!
