In Fall, I love all things cozy. And this Healthy Sloppy Joe Bowl is cozy and perfect for your weekly meal prep. I always loved when my mom made sloppy joes. I don’t know if it is a midwest thing or a kid thing, but one thing is for sure. Man, do I still love them. So I guess with a cleaned up recipe there is no shame in that game!

If you have followed along for a while, you will know I actually have a sloppy joe stuffed pepper recipe and it’s a great recipe! But this time, we will making a big batch of sloppy joe mix and serving it with sweet po coins, and whatever roasted vegetable of choice. I used broccoli this time, but I like to swap with brussels sprouts, green beans, asparagus etc depending on what my mood is.

Healthy Sloppy Joe Bowls

Healthy Sloppy Joe Bowls are the perfect meal prep if you are looking for a healthy meal with a cozy vibe! Whip up a big batch and enjoy all week long!

Ingredients

  • 1 Red Bell Pepper, Diced
  • 1 Celery, Diced
  • 1 Green Bell Pepper, Diced
  • 1 Onion, Diced
  • 2 Cloves of Garlic, minced
  • 2 Pounds Ground Turkey
  • 6 oz Tomato Paste
  • 2 tsp Chili Powder
  • 2 tsp Paprika
  • 8 oz Tomato Sauce
  • 1/4 cup Coconut Aminos
  • 2 tbsp Apple Cider Vinegar
  • Salt and Pepper
  • 1 cup Stock or Water
  • 3-4 Sweet Potato, cut into coins
  • Roasted Veg of Choice
  • Olive Oil
  • Salt and Pepper
  • Green Onion, sliced

Instructions

Preheat oven to 375 degrees. Toss sweet potatoes in oil, salt and pepper and place on to lined sheet pan. Roast for 20 minutes or until soft flipping after about 12 mintues. Roast veggies of choice while sweet potatoes are cooking. Once roasted remove from oven and set aside.

Heat olive oil in skillet. Add in diced peppers, onion, celery, and minced garlic. Allow to cook until onions are translucent and fragrant. Season with salt and pepper. Add in ground turkey and brown while breaking up into crumbles. Add in tomato paste and cook while stirring. Add spices while continuing to stir. Next add in coconut aminos, apple cider vinegar, and tomato sauce. Stir together. Add in cup of water or stock and cook until liquid is thickened. Season with salt and pepper.

Add roasted veggies to a bowl and serve your sloppy joe meat over the top. Sprinkle with Green onion.
