Sheet Pan Gochujang Chicken - The Seasonal Junkie

Weekdays are about to get some heat with this Sheet Pan Gochujang Chicken and Bok Choy! That’s right people, this sheet pan meal is a bit spicy- so if you’re not into that this may not be the recipe for you. But if you are basically the sixth member of the Spice Girls- this is definitely the recipe for you!

What the heck is Gochujang?!

A staple in Korean cooking, gochujang is a spicy, sweet, umami pepper paste that is made from chile flakes, glutinous rice, fermented soybeans and salt. It pairs perfectly with a nice meat, perfect to add in soups and stews, and great with some Korean noods.

For this Sheet Pan Gochujang Chicken and Bok Choy, we basically make a Gochujang “paint” if you will. This is spread onto what ever veggies you would like to use. I used Bok Choy, but I have a hung most veggies would be delicious. Think broccoli, zucchini, squash, brussels, I could go on! And then spread perfectly on top of your choice of chicken.

Sheet Pan Gochujang Chicken and Bok Choy

Who doesn't love a sheet pan meal?! Perfect for the weekday you need to put this Sheet Pan Gochujang Chicken and Bok Choy into rotation!

Ingredients

  • 1 Whole Chicken, broken down or 6-8 bone-in Chicken Thighs
  • 6 Bok Choy, halved- If you're not a bok choy fan, feel free to use what ever you would like (broccoli, brussels, zucchini, etc)
  • Salt and Pepper
  • Spray oil
  • Green Onions, sliced
  • Sesame Seeds
  • Gochujang Glaze:
  • 1/4 cup Gochujang
  • 1 tbsp Honey
  • 2 tbsp Soy Sauce
  • 2 tbsp Rice Wine Vinegar
  • 1/2 tsp Ground Ginger
  • 3 tbsp of Oil

Instructions

Preheat oven to 450 degrees and make Gochujang Glaze by mixing all glaze ingredients in a small bowl.

Line a sheet pan with parchment paper and line up veggie of choice across pan. Using oil spray, spray your veggies and season with salt and pepper. Using a basting brush, brush veggies with Gochujang Glaze

Add chicken to the top of veggies and season with salt and pepper. Using a basting brush, brush chicken with with Gochujang Glaze.

After 20 minutes of cooking remove from oven and brush chicken and exposed veggies again with Gochujang Glaze. Return to oven and cook for 20-25 minutes or until chicken reaches 165 degrees. Top with sesame seeds and sliced green onion. Serve with Jasmine Rice.
