Kicking off all things tomatoes with with this easy Caprese Chicken Breast!
Is there even a limit on how many caprese inspired dishes? The answer? Simple! No way friends. Chicken is always something I’m trying to spruce up in our house because chicken can have a rap for being boring. Well, get that idea out of your head because this Caprese Chicken Breast is about to blow ya mind. And shake up your chicken game!
Caprese Chicken Breast
This Caprese Chicken Breast is your quick summer night go-to. Done in under 30 minutes and is everything summer flavors can offer!
Ingredients
- 2 Large Chicken Breasts, cut in 1/2 lengthwise
- 1/4 cup Pesto
- 4 oz Fresh Mozzarella, thinly sliced into 4 slices
- 3 Roma Tomatoes, thinly sliced
- Handful of Fresh Basil, thinly sliced
- Balsamic Glaze
- Olive Oil
- Salt and Pepper
Instructions
Preheat Oven to 400 degrees, in an oven proof skillet add oil and heat on medium high. Season sliced Chicken breast with salt and pepper. Sear chicken on both sides by cooking in hot oil for 2-3 minutes and then flipping to repeat.
When both sides are browned, add a tablespoon of pesto and spread on top of each chicken breast, add mozzarella slices, and then 2-3 slices of sliced roma tomato. Pop chicken into preheated oven until the temp reaches 165 degrees. This will take 15-25 minutes (depending on how thick your chicken is)
Remove from oven and let rest. Drizzle with balsamic glaze, and sprinkle with freshly sliced basil.
