Ringing in the end of Summer never looked so good with this Green Goddess Pasta Salad!

Hiya everyone, my goodness it feels good to be back with some recipes, some FALLL recipes. AMIRIGHT?! Well AZ is a little funky because we have some overlap with our seasonal produce. Because it is so dang hot, some of the summer goodies for most are fall goodies here. Which is where this Green Goddess Pasta Salad came from! Think tangy creamy green goddess dressing, crunchy fresh vegetables, and carby good cold pasta. Yes friends It’s a good one.

Let’s talk Green Goddess dressing first!

Apparently in the 1920’s, Chef Philip Roemer worked at a hotel restaurant in San Francisco and whipped up this green masterpiece as a tribute to a famous actor in a play at the time that was called “The Green Goddess”. So you’re welcome if you ever get that question on “Who wants to be a millionaire” someday, venmo me 10%. Then in the 70’s, well 1970, we should probably start being more specific, since we are living in the 2000’s now. This Green Goddess came back in the masses, as a major salad dressing brand produced it for consumers. I imagine the groovy color probs had something to do with it. But it is a hit nonetheless, and boy am I glad it is. Because hello! This Green Goddess Pasta Salad just would not be the same. Let’s talk about what makes a Green Goddess Dressing so dang good, shall we?

Anchovies and Garlic.

Please just try it. I have friends that won’t and it does really keep me up at night.

Fresh Herbs.

It’s what gives this green goddess pasta salad it’s green life.

Lemon.

Because obviously lemon goes into 90% of all recipes.

Mayo and Greek Yogurt.

Cream and Tang. You’re welcome.

Ingredients

  • Green Goddess Dressing:
  • 2 Anchovy Fillets packed in oil
  • 1 Clove of Garlic
  • 1/4 cup, Green Onion
  • 1/4 cup, Fresh Dill
  • 1/4 cup, Fresh Cilantro
  • 1/4 cup, Fresh Parsley
  • 1/4 cup, Fresh Basil
  • 1/2 cup Mayo
  • 1/2 cup Greek Yogurt
  • Juice from 1 Lemon
  • Salt and Pepper
  • Salad:
  • 1 pound Pasta, cooked according to package instructions and chilled in the fridge
  • 6 oz Butter Lettuce Blend, chopped
  • 4 Radishes, thinly sliced
  • 1 Cucumber, sliced and cut into half moons
  • 2 cup Sweet Corn Kernels (I didn't cook the corn and cut them right off the cob for use)
  • 1/2 cup Green Onions, sliced

Instructions

Cook Pasta according to instructions and cool

Mince garlic and anchovies until it becomes a paste. Add minced garlic and anchovy, herbs, lemon juice, mayo, greek yogurt into a food processor and pulse until smooth. Season with salt and pepper to taste.

In a large bowl add cooked/cooled pasta, chopped butter lettuce, sliced radish, cut cucumber, sweet corn kernels, sliced green onion, and dressing. (I like to start out light with the dressing and add in more if I need more.

Serve!

Notes

Leftover dressing is amazing to dunk your veggies into!
