This Caesar Tortellini Salad is what summer dreams are made of.

Before we talk about this Caesar Tortellini Salad, let’s rewind back to a time of college days. Lots of late nights out…. and lots of drunk ordering food. While most peoples drunk late night munchies were pizza, taco bell, nachos… I’m sure the list can go on. Mine happened to be a Classic Caesar Salad. That’s right, if I remember correctly, my typical order was from some random pizza joint in Tempe and I always ordered a Classic Caesar Salad. So fast-forward to current day. I’m still OBSESSED with Caesar salads and it is one of my go-to’s when I want a delicious meal.

Obviously the star of a Classic Caesar Salad is none other than the dressing. If the dressing isn’t perfect, you don’t need that negativity in your life. My solution?! Make it yourself! Which is exactly what I did for this Caesar Tortellini Salad. Now I know, that this recipe came from somewhere- I did not come up with it, but it’s the only one I use. I’m not sure who to credit, but if you are the Caesar expert who came up with it, let me know- I will give you credit. But I feel like Caesar Dressing is just something that is written in the stars.

Ingredients to making the BEST Classic Caesar Salad: There are no substitutions in my humble opinion:

1.) Anchovies- You need them canned in oil- Gives Caesar the flavor it is best known for

2.) Garlic- Once I forgot to put garlic in my dressing. Top 10 biggest mistakes I’ve made in life

3.) Egg Yolk- Needed for Emulsification

4.) Worcestershire Sauce- Gives it some sweetness

5.) Dijon Mustard- Also helpful in emulsification

6.) Lemon Juice- Flavoring

7.) Olive Oil- Really any oil is fine, I prefer olive oil

8.) Grated Parmesan Cheese- Because come on why wouldn’t you have cheese in the dressing, cheese in the salad, and cheese everywhere else.

Tortellini Pasta Salad

The reason I love this Caesar Tortellini Salad is because it’s the perfect cool meal for summer. Perfect with a glass of still rose. Or if you are looking to share, bring this bad boy to your next BBQ, your guests will be pleasantly surprised.

Okay if you LOVE a classic Caesar Salad, you are going LOVE this Caesar Tortellini Salad. Perfect for a light summer dinner or your next gathering.

Ingredients

  • 20 oz Cheese Tortellini
  • 1 large or 2 small Romaine Lettuce Heads, chopped
  • 1/2 cup Shaved Parmesan
  • 1/2 Loaf of Bread, cut into 1-in cubes
  • 3 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Cracked Pepper
  • 4 Chicken Breasts, cooked and cubed
  • 3/4 cup Caesar Dressing or Make your own:
  • Classic Caesar Dressing:
  • 2-3 Anchovy filet, chopped until it becomes a paste
  • 1 Egg Yolk
  • 1/2 Lemon, juice
  • 1/2 tsp Worcestershire Sauce
  • 2-3 Cloves of Garlic, minced
  • 1/2 tsp Dijon Mustard
  • 1 cup Olive Oil
  • 1/2 cup Parmesan Cheese

Instructions

Preheat oven to 375 degrees

Cook tortellini according to package- After you drain chill pasta in fridge

In a mixing bowl toss cubed bread, olive oil, salt, and pepper until coated

Add to sheet pan spreading so the pan isn't over crowded

Once oven is heated, cook croutons cooking for about 10 minutes- until bread is golden and toasted

If you are making the dressing:

In a medium sized mixing bowl add anchovy (once it has become chopped into a paste), garlic, egg yolk, lemon juice, worcestershire sauce, and dijon mustard. Whisk ingredients together.

Once completely mixed, start drizzling oil slowly while whisking. This will create an emulsion. While you are whisking oil into dressing, if it gets too thick add a little bit of water to thin out.

Once you have added all the oil, add in parmesan cheese, salt, and pepper- once complete chill in fridge

Toss chilled cooked tortellini, chopped lettuce, croutons, chicken, and dressing (3/4 cup- use more if you'd like)

Top with shaved parmesan
