Whole30 Greek Salad, because no good Whole30 story doesn’t start with salad… Is that a thing?!
Well, I’m making it one, because look at that beautiful plate of freshy Whole30 goodness.
Before we get into what makes this Whole30 Greek Salad, great.. because obvi the plate is more than just looks…. I wanted to tell you guys… Oh. My. God. We are moving. AGAIN.
I know some of you might be like so what, we move every year. That is just not the case, or more accurately.. it did not use to be the case. But, it will be good. It will allow us to save some money for the wedding and will be back in our favorite area with all our favorite spots. Hello, walking distance to Cornish Pasty!! (My favorite restaurant) . While we are are leaving behind granite, we are going to enjoy the area so much more. Stay tuned on all updates while that madness occurs.
Now back to the good stuff.
I’m sure you have noticed that I’ve been hyper focused on Whole30 and Paleo as of late. Why you ask? Simply because I want to look and feel my very best at my wedding. Which is coming up in the beginning of December. And I’ve said it once, I’ll say it again. Whole30 makes me feel AMAZING. Also, after eating clean for 30 days, you look pretty amazing too. So my plan is to cycle 1 month Whole30, 2 months Paleo with cheat days (because sanity).

Honestly though, when you get to eat super flavorful foods like this Whole30 Greek Salad, you really don’t feel like you are missing out. At the end of every meal I feel satisfied.
Can we also talk about how beautiful this Whole30 Greek Salad is?
Greek Salads in particular, are beautiful. All the differences in those Mediterranean colors have me looking at a salad with heart eye emojis. Anyways, to dress this flavor bomb up, I made a lemon-herb vinaigrette and it added so much brightness!
So the moral to this Whole30 Greek Salad story is…
Whole30 or not, this meal is quick and easy week night meal and maybe even leftovers for the next day. Enjoy friends!
Whole30 Greek Salad
- 3 cup Mixed Greens
- 1/2 cup Cherry Tomatoes, halved
- 1/4 cup Red Onion, thinly sliced
- 3 tbsp Kalamata Olives
- 1 Cucumber, ribboned or cut into half circles
- 1/2 cup Marinated Artichokes, chopped
- 2 Chicken Breasts
- Dried Oregano
- Red Pepper Flakes
- Salt and Pepper
- 1 tbsp Olive oil
- Lemon Herb Vinaigrette:
- Juice of 2 Lemons
- 1/2 tsp Dried Oregano
- 1/2 tsp Dried Thyme
- 1 tsp Dijon Mustard
- 1/3 cup Oil
- Salt and Pepper
Preheat oven to 400 degrees
Season chicken with dried oregano, salt, and pepper
In oven safe skillet heat olive oil on medium high heat
When smoking, add chicken once seared and brown flip
Once both sides are browned pop it into the oven and cook for 12-15 Minutes, until chicken has reached 165 degrees
Set aside when finished cooking
Top mixed greens with tomatoes, sliced onions, kalamata olives, ribboned/cut cucucumber, and artichokes
Juice 2 lemons into a small bowl
Add oregano, thyme, and dijon mustard, whisk together
Slowly drizzle olive oil in while whisking until combined
Season with salt and pepper
Slice chicken and place on salad
Drizzle with dressing
