It should come as no shock to you, I LOVE EGGS. If I am being completely honest, there is rarely a morning that I don’t choose them as my wake up call. Also not surprising, I eat them at night for dinner. Honestly, I don’t really don’t see anything wrong with having eggs at any time of the day. Go ahead, try and prove me wrong….

For lunch this week, I thought a more lunch appropriate egg option was probably best, seeing as frying pans are far and few between in a professional office. That option, you ask? None other than my healthy egg salad recipe! But before we get into this little gem of a easy summer recipe, I want to talk about the appliance that is making all my egg dreams come true.

So this isn’t your regular egg salad recipe, It’s a cool egg salad. You’re welcome for the Mean Girls Reference. This healthy egg salad gets brightened up with some herbs. It’s the perfect recipe to have for lunch during the week on some whole wheat toast, or it’s great in a lettuce wrap if your living your best paleo/Whole30 life.

Healthy Egg Salad Recipe

Serves: 4
Cooking Time: 1 Hour 20 Minutes

Ingredients

  • 8 Eggs, hard-boiled in my Dash Egg Cooker
  • 1/3 cup No-Sugar Added Mayo
  • 1 tsp Dijon Mustard
  • 2 tbsp Dill, chopped
  • 2 tbsp Tarragon, chopped
  • 2 tbsp Parsley, chopped
  • 2 tbsp Chives, sliced
  • 2 tbsp Red Onion, small diced
  • 2 Celery Stalks, diced
  • 1/2 tsp Garlic Powder
  • 2 tbsp Lemon Juice
  • Salt and Pepper, to taste

Instructions

Hard-Boil your eggs using a Dash Egg Cooker or in a pot

Allow to cool in the fridge for at least an hour

Chop Eggs

In mixing bowl add chopped eggs, chopped herbs, diced celery, diced onion, mayo, dijon, garlic powder, lemon juice, salt, and pepper

Stir to combine

Sprinkle extra sliced chives on top

Chill in the fridge

Serve by itself, on toast, or in a lettuce wrap
