Easy Coconut Curry with Chicken is something I definitely learned to love later on in life. Anyone who has been in the apartment industry will know why. Curry is a blend of very pungent spices and those who cook with it often end up with a home that will forever smell like it.
So having this as my only experience with Curry, you can imagine I was a little hesitant to try it out. But boy, I was missing out on such a great part of culinary indulgent. And then when I went to Thailand, my curry world was turned upside down.
There are differences between Thai and Indian Curry recipes, but they are both equally delicious. This Easy Coconut Curry with Chicken is closer to the Indian curry recipes, because I’ve mainly used dry spices.

Chicken Coconut Curry can be served with many things ranging from jasmine rice or na’an bread. Something about dipping some fresh na’an bread into anything curry is enough to send me into culinary love. To keep things nutritious I served mine over a mixture of quinoa and brown jasmine rice. Let me tell you, it was perfection.

Easy Coconut Curry with Chicken
- 2 Chicken Breasts, cut into bite-sized cubes
- 3 Carrots, peeled and diced
- 1 ½ tbsp Garlic, minced
- 1 cup Butternut Squash, medium diced
- ½ Red Onion, cut into thin strips
- 1 can Light Coconut Milk
- 1 Jalapeno, diced (if you leave seeds in, it will be hotter)
- ¼ cup Cilantro, roughly chopped
- 3 Green Onion, sliced
- Cooked Rice or Naan bread to serve with
- 1 tbsp Curry Powder
- 2 tbsp Agave Nectar/Sweetener of Choice
- 2 tbsp PB 2 or Peanut Butter
- Salt and Pepper
- ½-1 Lime, juice
- Olive Oil
- Optional Toppings: Sliced Red Cabbage, Bean Sprouts
- Optional Sides: Cooked Rice, Naan Bread
Heat 2 tbsp of oil in large saute pan
Add red onion, garlic, carrots, jalapeno, and butternut squash
Add curry powder and stir
Add chicken and stir
Add coconut milk and cook down until it starts to thicken, about 20-25 minutes
Stir in 2 tbsp of pb 2 or peanut butter
Squeeze lime juice and sweetener and stir
Add Salt and Pepper to taste
Taste to see if you need more lime juice or any other seasonings
To serve pour on top of rice or serve along side naan bread
Top with cilantro, green onion, and other optional toppings
