Asian Cucumber Salad with Miso Marinated Salmon
Oh man, this week has been bananas! I have had a wedding catering tasting, one cake meeting, 2 cake orders, and my normal day to day- and yes, I am aware it is only Wednesday.
At one point, I was baking two cakes, my mom was texting me photos of her on stage with The Goo Goo Dolls…. yes guys, The GOO GOO DOLLS. All I could think, while I was elbow deep in cake batter at 10 PM on Saturday night was, This feels ironic. Although I love what I do, I would say times like this are pretty exhausting. It was such a relief to get everything all finished without any major catastrophes. After my mountain of dishes are finished, cue in the much needed Netflix binge sesh.
Times like this call for quick and easy meals my friends.
The Spiralizer strikes again with this Asian Cucumber Salad!
Okay, I seriously cannot get enough of all goodness you can make with a spiralizer!
I am desperately trying to use the oven only when completely necessary. Basically, in this house there have been A LOT of salads lately. Which is a-okay with me. Cucumbers in the summer are a beautiful thing, and there is always an opportunity to add a little more beauty to your day. When you prep cucumbers into ribbons with a spiralizer, the texture is amazing. I dressed the Asian cucumber salad with an Asian dressing that pairs perfectly with the Miso-marinated salmon on top! One bite and your mind will be blown. Of course, I always like to spice up my life. I added sliced serrano peppers in with the Asian cucumber salad and it was just what it needed. The best thing about this dish, you ask? After the Salmon had marinated, It took me a whole 15 minute to make!

Asian Cucumber Salad with Miso Marinated SalmonPrint Recipe
- Miso Marinade:
- 2 tbsp Miso
- 2 tbsp Rice Vinegar
- 2 tbsp Soy Sauce
- 1 tbsp Honey
- Salt & Pepper: TT
- Asian Cucumber Salad Dressing:
- 2 tsp Soy Sauce
- 1 tbsp honey
- 2 tbsp Rice Vinegar
- 1 tbsp Sesame Oil
- Salt & Pepper TT
- Optional: Sprinkle of Red Pepper Flakes
- 4-6 oz of Salmon
- 1 Cucumber, Ribboned with Spiralizer
- 1 tsp Cilantro, chopped
- 2 tbsp Green Onion, chopped
- 1 tsp sesame seeds
- Optional: Sliced serrano peppers to mix in
In bowl, with whisk, mix ingredients for miso marinade
Using a basting brush add marinade to salmon and allow to sit for at least 30 mins
In bowl, Using whisk, mix together ingredients for salad dressing until well mixed set in fridge to chill
In bowl, toss together cucumber, dressing, and cilantro
Top with green onion, sesame seeds and serrano peppers
Chill in fridge
After Salmon is ready
Heat saute pan, with 1 tsp of sesame oil on medium heat
Once hot, place salmon and cook until bottom is golden
Flip and repeat until desired doneness is reached
With fish, I like to have mine medium
Top salad with salmon and enjoy!
