So this morning was kind of funny and I have to share, before we talk about how great this easy breakfast sandwich recipe is. Back in March, I adopted my fur baby, Seal. And I get it, everyone is like, blah blah blah, my dog is the best dog in the world. But guys, the thing is, I think my dog IS the best dog in the world. He seriously behaves like he grew up taking etiquette classes. Yesterday I caught him folding a napkin…. into the most perfect triangle…. okay…. I made that up. But, I wouldn’t be surprised.

Anyways, I haven’t heard this dude bark the whole time we have had him. And today while we were walking, this American Bull Dog was walking past us and must’ve looked at Seal the wrong way because some doggy drama went down. I’m talking- barking- hopping-leash-pulling, it was the real deal. And instead of saying be quiet, I was like chanting him on. I think my quote was “Oh my god, Sealy! That’s your bark?! Good for you buddy! Keep it up!” The owner of the other dog is just staring at me, trying to figure out what just happened. And I was like “Sorry, I’ve just never heard him bark before.” Milestones people, it’s all about the milestones.

Okay, now the food.

After all that excitement, I had 20 minutes to make my breakfast before I had to leave for work. My obvious solution, my 3-4 times a week usual breakfast. This easy breakfast sandwich will make you feel all sorts of happiness after you dig your fork into your egg yolk allowing it to ooze in all it’s eggy glory. Life hack: your bread is the perfect delicious mop. You are welcome. As you can see by the picture below, I love hot sauce on my egg, try it out.

Really, your english muffin is your canvas, if you have turkey bacon around through some turkey bacon on it. The great thing about sandwiches (including this easy breakfast sandwich) is they are customizable af.

Well get crackin! -Get it? It’s funny cuz you actually have to crack eggs. ha.

Easy Breakfast Sandwich

Serves: 1
Cooking Time: 12 Minutes

Ingredients

  • 1/2 English Muffin, toasted
  • 1/2 Avocado
  • 1 Slice of Tomato
  • Small handful of sprouts
  • 1 Egg
  • 2 tsp Oil of Choice
  • Salt and pepper

Instructions

While your english muffin is toasting, turn on a small pan with oil on medium heat

Crack egg and allow egg whites around yolk to cook, season with salt and pepper

Once egg is sliding around pan flip it and cook opposite side until desired doneness- I like mine medium

Turn off heat and leave egg in pan

After bread is done toasting, smash avocado and spread

Add sprouts and tomato

Top with your egg

Optional: Sprinkle some hot sauce
